Green Mac and Cheese – with Healthier Fats

A Healthier Fat Green Mac and Cheese

This was kind of an “experiment” just to see if it was as delicious as the recipe I saw online said it was.

Those who know me well, know that I am a Mac & Cheese SNOB! And I can be hard to please when it comes to my favorite dish on the planet! But this was really good!

The recipe I saw on line used heavy cream and butter. My version DOES NOT! Here is the list of ingredients and how I did it. Can I just say, this was soooooooo delicious! I just couldn’t believe how good it was!

Green Mac and Cheese

1/2 c Chopped Baby Spinach
1/2 c Chopped Green Onion
1/2 c Chopped Swiss Chard
1 Tbs Fresh Chopped Garlic
1/4 tsp Black Pepper
1/4 tsp Ground Mustard Seed
1/4 Tbs Smoked Paprika
I/2 Tbs Onion Powder
1 & 1/2 Large Avocado
1/2 – 1 cup Plain Almond Milk (may adjust to your preference for creaminess)
2 Tbs Chick Pea Flour
1/2 cup Shredded Cheddar Cheese
1/2 cup Shredded Gouda Cheese

Boil a pot of water, and cook your choice of pasta until done, drain and set aside. Or time it so that your sauce and pasta are done at about the same time and it will be hot and ready to eat immediately!!

Set aside the cheese, chick pea flour, and almond milk

Place all other ingredients in a high powered blender with about 1/3 cup almond milk or just enough to to purée ingredients. You want it to be smooth and slightly thick.

In a Saucepan, over medium heat, bring almond milk to a simmer, add in chick pea flour, stir and let thicken slightly. Add in cheese. When it starts to thicken a little more then add in the green mixture from your blender – keep stirring. Let it thicken into a “Green Cheese Sauce”

When your Green Cheese Sauce is ready pour it over your pasta and mix well.

Serve garnished with chopped parsley and a sprinkle of Parmesan cheese!

I don’t think my photo does this dish any justice, however, it was sooooo delicious and decadent I just had to share it with you!!

I served my husband’s with a little crisped prosciutto garnish along with the parsley & Parmesan and he LOVED IT!
All ingredients can be adjusted more or less to your liking!
