Gluten Free Crust-less Fruit Pie

A friend of mine, Ron H. made this absolutely delicious gluten free Crust-less Fruit Pie. He used a combination of strawberries, blueberries and raspberries. It was incredible!

Ingredients

  • 1 cup almond flour
  • 1 cup white sugar
  • 1/4 teaspoon salt
  • 2 cups fresh (or frozen) mixed berries of your choice
  • 1/2 cup chopped pecans
  • 1/2 cup butter, melted
  • 2 eggs
  • 1 teaspoon almond extract

    Use fresh or frozen berries!

Directions

  • Preheat oven to 350 degrees. Grease one 9 inch pie pan.
  • Combine almond flour, sugar and salt. Stir in berries and the pecans and toss to coat. Stir in the butter, beaten eggs and almond extract.
  • Spread batter into prepared pan.
  • Bake at 350 degrees for about 40 minutes or until a wooden pick inserted near the center comes out clean.

This is definitely best served warm and with whipped cream or ice cream added on top! We treated ourselves and used Blue Bell Homeade Vanilla.
