Wiley, this one is for you!! You really need to put some in your smoker and I’ll come try it.
I used this recipe from cheesemaking.com a few months ago and had great success. I was surprised how easy it was and how delicious the cheese was! I used the tablet form of rennet. Although the recipe doesn’t call for it, I would recommend adding about a teaspoon of salt during the kneeding and stretching.
This is mozzarella is delicious with garden fresh tomatoes, fresh basil, olive oil and balsamic vinegar! Enjoy!!
